Quinoa Salad (GF)

This is a complete meal in itself and quinoa contains more high quality protein than any other grain, provides all the essential amino acids and is gluten free.

prep xxx    cook xxx   serves xxx


1 cup quinoa (available in Coles)
½ cup chopped parsley
¼ cup chopped red capsicum 
¼ cup sesame seeds
¼ cup pumpkin and sunflower seeds
½ teaspoon onion powder
¼ grated or chopped carrot 
1 tablespoon fresh ginger grated
1 chopped fresh garlic clove chopped
½ cup pistachios 
2 tablespoon honey (warmed)
2 tablespoon Braggs Liquid (unfermented soy sauce)


Simmer quinoa in two cups of water until liquid is absorbed. Add quinoa to remaining ingredients and mix well. Best left a day in the fridge first.
