Apple Crumble (GF)

serves: 6 people


800g tinned apple (or other fruit)
1-2 tablespoon pure maple syrup - optional
Sprinkle of cardamom


½ cup brown rice flour
1 cup desiccated coconut
1 cup cornflakes (hand crushed)
1/4 cup almond meal
Pinch of salt
¼ cup oil
2 tablespoons nut butter
2 tablespoons pure maple syrup
2-3 tablespoons honey

Mix apple and maple syrup together and place in casserole dish. In a large bowl mix flour, coconut, cornflakes, almond meal and salt together. In a smaller bowl mix together the remaining liquid ingredients with a spoon/fork. Pour liquid mixture over dry ingredients and mix well. Place the crumble on top of the fruit and bake at 150ºC for approx. 20 minutes until slightly browned on top.
