1 ½ cups soy flour
½ cup brown rice flour
1 tablespoon cornflour
2 ½ teaspoons aluminium free baking powder
1/8 teaspoon salt
sprinkle of cardamom - optional
¾ cup desiccated coconut
1 cup mashed banana
1/3 cup oil
1/3 – ½ cup honey
2 teaspoons vanilla extract
1/3 cup soy milk
Mix first 7 ingredients together in large bowl. In a separate small bowl, mix together remaining ingredients. Gently fold dry & wet ingredients together with spoon. Pour into lined loaf tin and bake at 130ºC for approx. 50-55 minutes.
