Date Loaf

2 cups chopped dates
½ cup water
1 cup plain flour
1 cup wholemeal plain flour
2 ¾ teaspoons aluminium free baking powder 
1 cup desiccated coconut
1 teaspoon vanilla extract
3 dessertspoons honey
1 cup soy milk
2 dessertspoons oil
1/4 cup almond meal - optional

        
Simmer dates and water until water is evaporated and then cool. Mix dry ingredients together then add date mixture and liquid ingredients and mix well. Pour into greased/lined loaf tin and bake at 140ºC for approx. 40 minutes.
