10 dried pineapple rings (1 ¼ cups)
¾ cup almond meal
¾ cup desiccated coconut
1 tablespoon vanilla extract
1 tablespoon cashew or almond spread
1 tablespoon honey - optional
1 tablespoon lemon juice
2 tablespoons finely grated lemon rind
coconut to roll balls in
Place pineapple, almond meal and coconut in food processor and process on high until pineapple is chopped very finely. Add remaining ingredients and process until mixture is well combined. Mold into balls and roll in coconut. Store in cupboard or fridge.
