¼ cup cashew butter
½ cup carob buds (unsweetened – optional)
3 tablespoons honey or pure maple syrup
pinch of salt
½ cup desiccated coconut
2 teaspoon vanilla extract
3 tablespoons soy cream cheese
extra coconut for top
Mix all ingredients together (except cream cheese) in a small saucepan on low heat until melted and thick. Take off heat and stir in soy cream cheese. Now pour into small lined dish and sprinkle with coconut. Refrigerate until hard.
