1 ½ cups crystallized ginger (250g)
¾ cup almond meal
1 cup desiccated coconut
1 tablespoon vanilla extract
1 tablespoon cashew/almond spread
coconut to roll balls in
Place ginger, almond meal and coconut in food processor and process on high until ginger is chopped very finely. Add vanilla and process until mixture is well combined. Mold into balls and roll in coconut. Store in cupboard or fridge.
