8 chopped potatoes
3 cups water
salt
1 chopped onion
2 cups water
2 teaspoons garlic
1 ½ vegetarian Massell stock cubes
300ml soy milk or coconut cream
Boil potatoes, water, salt and onion in large saucepan until soft. When cooked, drain all water from saucepan. Add to saucepan 2 new cups of water, garlic and stock and blend until smooth. Simmer for 5 minutes. Add cream just before serving.
