¾ cup boiling water
1 cup plain flour
½ cup wholemeal plain flour
pinch of salt
1 ½ teaspoons baking powder
1/3 cup honey
½ cup sunflower oil
1 mashed banana
2 teaspoons vanilla extract
Place dates in boiling water and cover for 5 minutes. In a large bowl mix flours, salt and baking powder together. Next add remaining ingredients to flour, including date mixture and mix with hand beaters. Pour into greased ring tin and cover with foil. Bake at 150ºC for approximately 50 minutes. Serve warm with sauce– can be reheated or frozen.
sauce:
½ cup cashews
1 ¾ cups water
2 teaspoons vanilla extract
1/3 cup pure maple syrup
1 dessertspoon honey
just under 1/4 teaspoon of salt
3 teaspoons cornflour
1 tablespoon sunflower or macadamia oil
Blend all ingredients together in blender for 2 minutes. Pour into saucepan and simmer until thick (add more water if too thick). Pour over sliced pudding when serving.
