serves 6 people
5 cups water
5 peeled & chopped small sweet potatoes,
2 Massell stock cubes (chicken style)
3 teaspoons garlic
2 teaspoons ginger
2 tablespoons lime/lemon juice
2 tablespoons coriander
400ml coconut cream
extra sweet potato for fried strips
Boil in large saucepan the water, sweet potato and stock. When potato is cooked, use slender blender/bar mix to make smooth. Add garlic, ginger, lime juice, coriander and simmer for a further 15 minutes. Add coconut cream last.
To make sweet potato fries – peel strips of sweet potato with a vegetable peeler, sprinkle strips with salt and then lightly fry strips in oil. Sprinkle over soup just before serving.
