prep 10 min makes 6-8 parfaits
cream:
2 1/2 cups water
1 cup cashews or blanched almonds
1 tablespoon vanilla extract
1/8 teaspoon of salt
2 tablespoons honey
2 tablespoon pure maple syrup (or extra honey)
1/3 cup cornflour
Note: you can replace the two tablespoons of pure maple syrup with 20 chopped dates. Add less cornflour though
cereal/fruit layers:
3 cups Granola Oat Clusters (250g) or GF cereal
3 cups tinned fruit (825g tin), chopped
Place all cream ingredients into blender and blend for 2 minutes. Then pour cream mixture into a large saucepan and simmer for 3-5 minutes until a large saucepan and simmer for 3-5 minutes until thick, stir regularly with hand whisk. Place 1 tablespoon of cream mixture into parfait glasses or cups. Then layer with cereal and fruit. Dried cranberries can be sprinkled on top as an option.
