¾ cup pearl barley
2.5 litres water
2 vegetarian chicken Massell stock cubes
1 cup chopped sweet potato
1 chopped onion
1 chopped carrot
3 chopped mushrooms
2 chopped potatoes
3 teaspoon garlic
¾ cup uncooked macaroni
1 tin tomato soup
3 tablespoons salsa
Soak barley overnight, drain and wash. Place barley in large saucepan and add 2.5 litres water & stock. Bring to the boil and add sweet potato, onion, potatoes, carrots, mushrooms and garlic. When veges are nearly cooked add macaroni and simmer until soft. Add tomato soup and salsa, then serve.
