1 cup dried mixed fruit
¾ dates, chopped in thirds
1 cup apple juice
½ cup peeled & grated apple (red or green)
½ teaspoon ground ginger
½ teaspoon ground cardamom
½ teaspoon ground coriander
1 teaspoon vanilla extract
1 tablespoon pure maple syrup – optional
1 teaspoon lemon juice
Place all ingredients into saucepan and simmer for 30 minutes on low until moisture is absorbed and mixture is thick and sticky, stirring regularly. Take off heat and store in fridge.
