1 ¼ cups sultanas or raisins
½ cup almond meal
¾ cup desiccated coconut
½ teaspoon cardamom
1 tablespoon vanilla extract
1 tablespoon cashew or almond spread
1-2 tablespoons honey
coconut to roll balls in
Place sultanas, almond meal, cardamom and coconut in food processor and process on high until sultanas are chopped very finely. Add remaining ingredients and process until mixture is well combined. Mold into balls and roll in coconut. Store in cupboard or fridge.
