½ cup plain flour (or GF flour)
½ cup wholemeal plain flour (or GF flour)
1/3 cup desiccated coconut
pinch of salt
1 tablespoon honey
¼ cup soy milk
1/3 cup sunflower oil
1 teaspoon vanilla extract

2 cups warm cooked mashed pumpkin
200g soy cream cheese
2 teaspoons vanilla extract
3 - 3½ tablespoons cornflour
2 tablespoons pure maple syrup
3 tablespoons honey
Mix dry ingredients of the pastry together then add remaining pastry ingredients. Mix well and press into small lined baking tin. Bake at 170ºC for 10 minutes. Mix all ingredients for pumpkin filling with slender blender. Pour onto slightly cooked pastry base. Bake in slow oven at 140ºC for 30 – 40 minutes.
