GRAINFREE CRISPBREADS



1 cup besan flour
1/2 cup quinoa or buckwheat flour
1/4 cup nut meal (crushed)
1/4 cup of mixed seeds (chia, linseed)
1 teaspoon mixed herbs
1/2 teaspoon salt
1/2 teaspoon garlic powder 
1/2 teaspoon onion powder powder
1/8 teaspoon smoked paprika
1/4 teaspoon dried dill
3/4 - 1 cup water approx.
(Sprinkle sesame seeds on top)

Mix dry ingredients together and then add water.  Spread mixture with wet hands thinly on a lined lamington baking tray. Place fork lines in mixture for decoration. Sprinkle with sesame seeds.

Bake at 160 for 45 minutes and then cut into squares. Turn squares over and bake other side for 15- 30 minutes. Store in pantry or freezer.

Cheesy-Garlic Twists

make 2 large twists


2 cups plain flour
1 ¼ cups wholemeal plain flour
1 teaspoon sea salt

1 ¾ teaspoons instant dry yeast
1 ½ cups warm water
1 tablespoon honey
3 tablespoon oil

“parmesan” cheese
“melting cheese” grated
garlic powder


Mix first 3 dry ingredients together. In a separate bowl, mix the remaining 4 ingredients together in a small bowl and pour over dry ingredients. Mix together in bowl. Turn out onto floured bench and knead for 5 minutes. Divide mixture into half. Set one half aside. With one half of the dough, divide into 3 long strips, place on lined baking tray and cover each strip of dough with grated melting cheese, parmesan and garlic powder. Plait or twist the 3 strips of dough around each other. Then do the same with remaining dough. Cover twists with more cheeses and garlic. Let rise in a warm place for 40 minutes. Bake at 160ºC for approx. 18 – 20 minutes.

Bread (GF)

1 ½ cups soy flour
1 cup brown rice flour
¼ cup corn flour
1 teaspoon salt
2 tablespoon Guar Gum (vegetable gum)
1/3 cup LSA

2 teaspoon instant dry yeast
1  2/3 cups warm water
2 tablespoon oil
1 tablespoon lemon juice
1 tablespoon honey
                    
Note: LSA stands for ground linseeds, sunflower seeds & almonds. It can be found at your local supermarket health section. Alternatives however are  flax meal, savoury yeast flakes, onion & garlic powder

Mix first 6 ingredients together in large bowl. In a separate bowl, mix the liquid ingredients together then add to dry ingredients and mix well by hand. Spoon into lined loaf tin. Smooth top of bread with wet hands. Cover and let rise in a warm place for approx. 1-1 ¼ hours. Bake at 160ºC for approx. 25 – 30 minutes. Best refrigerated. Can be frozen but the texture will become slightly crumbly.

Yeast Free Bread (GF)

1 ½ cups soy flour
¾ cup brown rice flour
2 tablespoon corn flour
1 teaspoon salt
2 ½ teaspoons aluminium free baking powder
2 tablespoons Guar Gum (vegetable gum)
1/3 cup LSA - optional
1 tablespoon savoury yeast flakes - optional

1  2/3 cups water
2 tablespoon oil
1 tablespoon lemon juice
1 teaspoon honey

Mix first 8 ingredients together in large bowl. Add remaining ingredients and mix well by hand. Spoon into greased/lined loaf tin. Smooth top of bread with wet hands. Bake at 160C for approx. 30 minutes. It is best to refrigerate. Can be frozen the texture will however become slightly crumbly.

1 Samuel 14:6

Basic Wholemeal Bread

2 cups plain flour
1 cup wholemeal flour
1 teaspoon salt

1 ¾ teaspoon instant dry yeast
1 ½ cups warm water
1 tablespoon honey
3 tablespoon oil


Mix first 3 dry ingredients together. In a separate bowl, mix the remaining 4 ingredients together in a small bowl and pour over dry ingredients. Mix together in bowl. Turn out onto floured bench and knead for 5-10 minutes. Place in large greased bowl and cover with gladwrap and place in a warm area for 1 ½ - 2 hours. Turn out onto floured bench again and knead for another 5-10 minutes. Shape into 2 small rounds or 1 large round and place in greased loaf tin. Let sit for 30 minutes to slightly rise then place in oven.

Banana & Coconut Bread (GF)

1 ½ cups soy flour
½ cup brown rice flour
1 tablespoon cornflour
2 ½ teaspoons aluminium free baking powder
1/8 teaspoon salt
sprinkle of cardamom - optional
¾ cup desiccated coconut

1 cup mashed banana
1/3 cup oil
1/3 – ½ cup honey
2 teaspoon vanilla extract
1/3 cup soy milk
                          
        
Mix first 7 ingredients together in large bowl. In a separate small bowl, mix together remaining ingredients. Gently fold dry & wet ingredients together with spoon. Pour into lined loaf tin and bake at 130C for approx. 50-55 minutes.



God does not forget the cry of the humble.   
Psalm 9:12

Cheesy-mite Scrolls

2 cups plain flour
1 ¼ cups wholemeal plain flour
1 teaspoon sea salt

1 ¾ teaspoon instant dry yeast
1 ½ cups warm water
1 tablespoon honey
3 tablespoon oil

grated melting cheese 


Mix first 3 dry ingredients together. In a separate bowl, mix the remaining 4 ingredients together in a small bowl and pour over dry ingredients. Mix together in bowl. Turn out onto floured bench and knead for 5 minutes. Roll pastry into large flat rectangle shape. Spread with marmite and sprinkle generously with “melting cheese”. Roll up and cut into scrolls and place on greased tray. Sprinkle with more grated cheese. Cover and let rise in a warm place for another 40 minutes. Then bake at 160ºC for 11-13 minutes.
