makes: approx 10 muffins
1 cup plain flour (or gluten free)
½ cup wholemeal plain flour (or gluten free)
1 ½ teaspoons aluminium free baking powder
pinch of salt
½ cup oil
1/3 - ½ cup honey
2 teaspoons vanilla extract
1 cup of ripe mashed banana (approx 2-3 bananas)
1/3 cup apple juice or soy milk
Mix first four ingredients together. Then add remaining ingredients and mix well with electric hand beaters. Pour into muffin cases and bake for approx. 17 minutes at 160ºC. Ring tin = 140º C for approx. 30-35 minutes. Dust with icing sugar – optional.
