½ cup cashews
1 ½ cups desiccated coconut
1-1 ½ cups mango sorbet or fresh mango
3 tablespoons pure maple syrup or honey
1 dessertspoon vanilla extract
2 tablespoons melted copha
200g tinned pineapple - optional
1 cup GF rice bubbles - optional
OPTION: You can add two cups fresh mango and then at the end stir in 1 extra cup of finely chopped mango plus ½ cup of extra coconut. You may need to add extra sweetener also.
Place all ingredients (except rice bubbles) into food processor and mix until smooth. Keep pushing mixture down from sides and keep mixing until smooth. Add rice bubbles to the mixture and then refrigerate until firm, then form into balls and roll in coconut. Freeze.
