1 large chopped onion
4 teaspoon garlic
6 grated potatoes
2 grated carrots
2 grated carrots
4 chicken-style Massell stock cubes
12 cups water
1 1/3 cup red lentils
140g tomato paste
1 tablespoon lemon juice
cumin - optional
200ml coconut cream
Fry onion & garlic in large saucepan with a little oil. Add remaining ingredients (except coconut cream) and simmer for 1 – 1½ hours until veges and lentils very soft. Stir in coconut cream and simmer for 3-5 minutes.
