1 tablespoon cornflour
1 tablespoon pure maple syrup/honey/fruit juice concentrate.

2 cups rolled oats
½ cup wholemeal flour
½ cup shredded coconut
pinch of salt
flaked almonds – optional
sprinkle of cardamom
3 tablespoon honey/pure maple syrup
¼ cup oil
1 tablespoon fruit juice concentrate
1 teaspoon vanilla
Place tinned/fresh fruit in a large bowl. In a cup mix the cornflour and maple syrup/sweeteners together, then mix into the fruit. Pour fruit mixture into large casserole dish. Then place first 6 crumble ingredients together in large bowl, mix well. Mix remaining liquid ingredients together and stir well into crumble. Pour crumble over fruit, cover with foil and bake at 160ºC for 30 minutes, then 5-7 minutes without foil.
