1 cup salted cashews
½ cup almond meal
1 cup desiccated coconut
1 tablespoon vanilla extract
3 tablespoons agave nectar
1 tablespoon honey
1 tablespoon pure maple syrup
1 tablespoon honey
1 tablespoon pure maple syrup
6 drops (approx.) pure peppermint oil
4 large soy carob chips grated
coconut to roll balls in
Place cashews, almond meal and coconut in food processor and process on high until crumbly. Add remaining ingredients (except grated carob) and process until mixture is well combined. Stir in carob then mold into balls and roll in coconut. Store in freezer.
