2 cups bean sprouts
2 cups chopped baby spinach leaves
½ cup mixed pumpkin/sunflower seeds
1 chopped and baked sweet potato
chopped sweet basil leaves (optional)
1 quantity of salad dressing
Chop and bake in oven the sweet potato. Cool. Mix all salad ingredients together. Pour salad dressing over just before serving. It is still yummy the next day.
