1 cup quinoa
2 cups water
1 bunch parsley
½ teaspoon salt
2-4 tablespoons olive oil
2 tablespoon lemon juice
½ - 1 teaspoon garlic powder
½ - 1 teaspoon onion powder
1 teaspoon dried or fresh mint to taste
2 chopped tomatoes
Cook quinoa in water until water is absorbed. Process parsley until finely chopped. Mix all ingredients together.
