1/2 cup almond meal
1 cup desiccated coconut
250g dried pineapple (1 1/4 cups)
1 1/2 tablespoons lemon rind
1 tablespoon vanilla extract
1 tablespoon cashew spread
1 tablespoon pure maple syrup
1/2 tablespoon honey
2 tablespoons lemon juice
Place first four ingredients into food processor and process until crumbs. Add remaining ingredients and process until well combined. Form into balls, roll in extra coconut and store in freezer.
Makes 25 balls.
