Crunchy Buckwheat Tabouli GF

1 cup activated buckwheat groats
1/2 teaspoon salt
2 - 3 tablespoons olive oil
2 - 3 tablespoons lemon juice
1/2 - 1 teaspoon garlic powder

 2 bunches of parsley chopped
1 chopped tomato
chopped mint to taste

Mix first 5 ingredients together in large bowl.
Allow buckwheat to blend well with liquid ingredients
then add remaining ingredients and mix well.

SPINACH PIE (GF)

1 1/2 cups cooked GF pasta
250g spinach cooked

Sauce:
3/4 cup cashews
2 cups water
1 tablespoon onion flakes
1 teaspoon celtic salt
1/4 cup savoury yeast flakes
2 tablespoons oil (opt)
1/2 cup cornflour
1/2 teaspoon garlic powder

Mix pasta and spinach in large bowl and set aside. Place remaining ingredients into blender and blend until smooth. Pour into the large bowl, mix well and pour into a greased baking/lasagne dish. (Lasagne dish can be lined with partly cooked pastry as another option) Bake at 170 degrees Celsius for approximately 35 - 40 minutes. Let sit slightly to firm up.

MUSHROOM STROGANOFF (GF)


1 cup cashews
4 cups water
1 vegetarian Massell stock cube (chicken style)
1/2 teaspoon Celtic/Himalayan salt
2 garlic cloves
1  1/2 tablespoons lemon juice
1 tablespoon tomato sauce
1  1/2 tablespoons cornflour
(5 large mushrooms finely chopped)


Place chopped mushrooms in large saucepan with oil and sauté. Set aside.
Place all ingredients (except mushrooms) into blender and blend until smooth,
approximately 2 minutes.
Pour blended mixture into large saucepan with mushrooms and simmer for 5 minutes.
Ready to pour over rice or pasta.  Serves 4-6.

Banana and Date Balls (GF)

1 ¼ cups dates (cut in half)
1 ¼ cups desiccated coconut
1 cup almond meal
¾ cup mashed banana (lady fingers)
3 tablespoons cashew/almond spread
 1 tablespoon honey
2 tablespoons pure maple syrup
1 tablespoon vanilla extract
2 tablespoons coconut butter

Please first three dry ingredients into food processor and process until crumbs. Add remaining ingredients and process until smooth. Form into balls and roll in coconut. Serve from freezer.

Banana Balls (GF)

3/4 cup almond meal
1 1/4 cups desiccated coconut
250g dried pineapple
3/4 cup mashed bananas (lady fingers)
2 tablespoons cashew/almond spread
3 tablespoons coconut butter
1 tablespoon vanilla extract
1 tablespoon honey
1 tablespoon pure maple syrup


Place first three dry ingredients into food processor and process until fine crumbs. Add remaining ingredients and continue to process until smooth. Let mixture firm up in freezer or fridge and then form into balls and roll in coconut. Serve from freezer.

Cherry Balls (GF)

200g glased cherries
1 cup desiccated coconut
1/2 cup almond meal
2 teaspoons vanilla extract
1 tablespoon cashew spread
1 tablespoon cherry/strawberry fruit spread
1 tablespoon pure maple syrup
1 tablespoon coconut butter
(5 large soy carob buds grated if making cherry ripe balls)

Place half of the glased cherries in a food processor and set aside remaining cherries. Then add the remaining ingredients (except grated carob) to the food processor and process until smooth. Chop remaining cherries in thirds and stir into mixture (along with grated carob if cherry ripe balls). Form into balls, roll in coconut and store in freezer.

Ginger Balls (GF)

200g uncrystallised ginger
3/4 cup desiccated coconut
1/2 cup almond meal
1 tablespoon vanilla extract
1/2 tablespoon honey
1 tablespoon pure maple syrup
1 tablespoon cashew spread


Place first three dry ingredients into food processor and process until crumbs. Add remaining ingredients and process until firm paste. Form into balls, roll in coconut and store in freezer.

Sesame Balls (GF)

5 tablespoons cashew spread
1 tablespoon honey
3 tablespoons pure maple syrup
Pinch of salt
2 teaspoons vanilla extract
1/2 cup desiccated coconut
3/4 cup (100g) sesame seeds


Place first 5 ingredients into small saucepan. Heat until mixture starts to bubble. Turn heat down, add remaining ingredients, stir continually while on low heat for 2 minutes. Cool slightly, form into balls and store in fridge.

Vegetarian Schnitzels (GF) (Nutfree option)

4 cups rice flakes (500g)
5 cups water
4 Vegetarian Massell stock cubes
2 teaspoons mixed herbs
1 teaspoon garlic powder
1 teaspoon onion powder
3 tablespoons tomato paste/sauce
6 tablespoons gf gravy powder mixed with 1/4 cup water separately
1 cup crushed walnuts (optional)
2/3 cup gf breadcrumbs
1 cup gf flour (soy, besan, brown rice)


Place first seven ingredients into a large saucepan and simmer until thick. Add prepared gravy mix and continue simmering for another 5 minutes until very thick. Take off heat and cool completely. Stir in remaining ingredients. With wet hands, take a small handful of mixture, slightly flatten and then roll into rice crumbs mixed with massell powder. Place on tray lined with baking paper and slightly flatten rissoles again with hands to form larger size rissoles if needed. Shallow fry both sides in oil. Suitable for freezing. Makes 35-40 medium schnitzels

Apricot Balls (GF)

1/2 cup almond meal
3/4 cup desiccated coconut
250g dried apricots (1 1/4 cups)
1 tablespoon vanilla extract
1 tablespoon cashew spread
2 tablespoons pure maple syrup
2 tablespoons honey


Process first three ingredients until fine crumbs. Add remaining ingredients and process until firm paste and well combined. Form into balls, roll in coconut and freeze. Makes 25 balls.

Berry Balls (GF)

1/2 cup almond meal
1 cup desiccated coconut
170g dried cranberries (1 1/4 cups)
1 tablespoon vanilla extract
1 tablespoon cashew spread
2 tablespoons pure maple syrup
2 tablespoons strawberry fruit spread


Place first three ingredients into food processor and process until crumbs. Add remaining ingredients and continue to process until well combined. Form into balls, roll in extra coconut and store in freezer. Makes 25 balls.

Omega 3 Maple Balls (GF)

1 1/2 cups walnuts
1/3 cup pepitas
1 cup desiccated coconut
1 tablespoon of linseed meal or LSA
1 cup dates, chopped in half
1 tablespoon vanilla extract
1 tablespoon cashew spread
1 tablespoon honey
2 tablespoons pure maple syrup


Place walnuts and pepitas in food processor and process until crumbs. Add linseed, dates and coconut and continue to process until fine crumbs. Add remaining ingredients and process until well combined. Form into balls, roll in extra coconut and store in freezer. Makes 25 balls.

Lemon Balls (GF)

1/2 cup almond meal
1 cup desiccated coconut
250g dried pineapple (1 1/4 cups)
1 1/2 tablespoons lemon rind
1 tablespoon vanilla extract
1 tablespoon cashew spread
1 tablespoon pure maple syrup
1/2 tablespoon honey
2 tablespoons lemon juice


Place first four ingredients into food processor and process until crumbs. Add remaining ingredients and process until well combined. Form into balls, roll in extra coconut and store in freezer. Makes 25 balls.

Peppermint Balls (GF)

1 cup salted cashews
1 cup desiccated coconut
1/2 cup almond meal
1 tablespoon vanilla extract
3 tablespoons agave nectar
1 tablespoon honey
1 tablespoon pure maple syrup
6 drops pure peppermint oil
4 large soy carob buds grated


Place first three dry ingredients into food processor and process until crumbs. Add remaining ingredients and process until firm paste. Stir in grated carob, form into balls, roll in coconut and store in freezer.

Steamed Pudding - GF option

2 cups non dairy milk
1/2 cup honey
2 cups mixed dried fruit
1/2 cup oil
3 tablespoons nut or seed spread
2 teaspoons vanilla extract
1/4 teaspoon salt
5 large carob buds - optional, for colour only
1/4 teaspoon cardamom, ground
1 1/2 cups plain flour or GF flour
1/2 cup wholemeal plain flour or GF flour
2 teaspoons aluminium free baking powder

Place first 9 ingredients into large saucepan and simmer for 3 minutes.  Take off heat and cool. Stir in remaining ingredients and pour into greased pudding dish.  Flatten mixture with wet hands. Place dish in large saucepan with water, making sure the water level height is half way up pudding dish.  Place lid on saucepan (no lid to be on pudding dish) and gently simmer for 1 1/2 hours.  Check pudding regularly for the first 10 minutes to make sure water is not splashing onto pudding. Take pudding dish out of large saucepan and let sit for 5 minutes on bench.  Slightly loosen pudding by running knife around edge, give a gentle shake, then turn out on plate. Serves 8-10.

Truffles GF (nut free option and soy free)


1/4 cup honey & pure maple syrup combined or agave
1/3 cup cashew spread or sunflower seed spread
1 teaspoon vanilla extract
1 tablespoon carob powder (light)
1 cup puffed brown rice (1 1/3 cups maybe needed for seed spread)
1/3 cup desiccated coconut or puffed millet
(extra coconut to coat balls)

Mix first 4 ingredients together in small bowl, set aside.  In blender, place the puffed rice and blend until powder.  Add rice powder and coconut to truffle mixture, mix well, form into balls and roll in coconut.  Store in fridge.  Makes approximately 20 truffles.

Coconut Macaroons - GF (no baking)



½ cup copha or coconut  butter
2 teaspoons vanilla extract
3 tablespoons honey or agave
2 cups desiccated coconut

Place first 3 ingredients into large saucepan and melt on low heat.  Turn off heat, stir in coconut and spread mixture onto large plate.  Cool slightly in fridge.  Place small amounts of mixture into a metal tablespoon (preferably a measuring spoon which is deep), press mixture down very firmly with fingers and then gently slide macaroon off spoon onto a flat tray.  (Mixture will crumble and break if not cooled enough but be careful not to leave in fridge too long).  Refrigerate prepared macaroons until firm and store in fridge or freezer.  Makes approximately 26.

Rocky Road Fudge - GF (nut free)


¾ - 1 cup puffed corn
¼ cup desiccated coconut
¼ cup dried cranberries
¼ cup dried pineapple, chopped roughly

1/8 cup melted copha or coconut butter
4 tablespoons seed spread (sunflower)
3 tablespoons honey
2 teaspoons vanilla extract
1 tablespoon carob powder (light)
pinch of salt

Place first 4 ingredients into bowl, mix well and set aside.  In a large saucepan melt the copha, turn off heat and stir in the remaining fudge ingredients with hand whisk. Pour dry ingredients into large saucepan and mix all ingredients together well. Flatten mixture into small lined/greased container.  Store in fridge.  Cut into 12-16 small pieces.

1/3 cup nuts

3 tablespoons nut spread
1/4 cup (or less) honey
2 teaspoons vanilla extract
1 tablespoon carob powder (light)
pinch of salt

Place first 5 ingredients into bowl and mix well.  In a large saucepan, place the remaining 5 ingredients, stir with hand whisk and heat on low (very slight simmer) for 4 minutes.  Turn off heat, pour dry ingredients into large saucepan and mix all ingredients together well. Flatten mixture into small lined/greased container.  Store in cupboard or fridge.  Cut into 12-16 small pieces.

Cream of Celery & Potato Soup (GF)


1 onion, chopped
4 garlic cloves, chopped
7 potatoes, peeled and chopped
1 cup celery, chopped
2 vegetarian chicken-style massell cubes
5 cups water
½ teaspoon salt
1 tablespoon lemon juice

Cream
½ cup cashews
1 cup water
1 tablespoon oil

Lightly fry onion and garlic in large oiled saucepan.  Add remainining soup ingredients (not cream) and simmer until vegetables are cooked.  Use slender blender or bar mix in soup to blend until smooth. Place cream ingredients into a blender and blend for 2-3 minutes.  Pour cream into soup mixture and simmer for 5 minutes.  Ready to serve.
